Amaranthus green is an annual herb and is eaten as a boiled green or a vegetable in many parts of the world. it is used as a medicinal herb in ayurvedic medicine and is rich in protein and contains the essential amino acid lysine.
HARVEST : Leaf amaranth prefers a fertile, well-drained garden soil, full sun to partial shade. soil temperature needs to be at least 20°c to germinate seed, sow late spring and summer. harvest is 30 days to baby leaf and 50 days to maturity, when they are about 20 cm tall. as they get older the leaves will get tougher.
