Amaranthus Red Seeds

 Red Amaranthus has become very popular recently and it is available in many colors of red, green, and purple. Smaller leaves are a bit bitter to taste and hence not used much for consumption and older leaves can be used in the preparations of curries etc. It can be grown very easily and doesn't require much support. It's even considered a weed as it's very easy to grow and can be often seen on farms alongside other vegetables or trees. The color is due to the presence of carotene. It also has many other nutrients like Iron, Calcium, and vitamin C just like spinach.

They can be used in making curries and also used along with other vegetables and cooked together. From salads to soups it fits everywhere and can be had raw or cooked.
